"Tenmasa” uses conger eel, which is bought from Toyosu early in the morning every day. Sometimes the eels are just so fresh that they can move lively until the evening!
The most popular dish in the menu is "Tempura of conger eel with special sauce for bowl rice". The tempura of conger eel with special sauce is delicious! A nice match between the special sauce for bowl rice from the predecessor and the fluffy meat of conger eel.
"Tempura of conger eel (salt)" is recommended as well. It is generally said that "conger eel is delicious with salt". Salt is just making the taste of conger eel stronger.
